Jigsaw: Chop it up from Lettuce Eat to Wild Beet

Kelcie Nollner was living in New York and interning at Self magazine when she discovered salad-focused restaurants.
One day, she was sent to pick up lunch for the office at the nearby Chopt Creative Salad Co. After that, she ate there every day while in the Big Apple, where she also was studying fashion merchandising.
But when she returned to her hometown of Memphis, there wasn’t a Chopt. There wasn’t anything like it, either.
So she decided to pivot from fashion and open a salad restaurant herself.
“I missed it so much,” Nollner said. “That’s why I decided to do it. I was trying to figure out what I wanted to do long term, and I don’t know, I just missed it.”
She opened her first restaurant under the name Lettuce Eat in 2014. But when she tried to open a second location, she ran into a trademark issue and changed the name of the concept to Wild Beet Salad Co.
