Wet or dry?

That’s the usual question when ordering ribs in Memphis.

But at The Bar-B-Q Shop, there’s another option: glazed ribs.

The first time I tried them — or even heard of them, to be honest — was a few years ago.

I had been eating at The Bar-B-Q Shop for decades, yet somehow had never bothered to read the menu closely. Like many Memphians, I was conditioned to order my ribs either wet or dry.

I’m so glad Eric Vernon, the restaurant’s second-generation owner, suggested I try the glazed ribs.
