Usually, when I head to Babalu, it’s with friends so we can split a lot of food.

Specifically, our go-to order is the table-side guacamole with bacon, house-made chips, baked queso and sweet, savory rosti potatoes, washed down with a bourbon and peach-heavy drink called the Frozen Juke Joint. Just walking past the building evokes memories of laughter and gossip after a long workweek for me. 

Recently, the Babalu team invited me to try their new-ish birria menu items. I tried to get a friend to join me, but we’re older now with more responsibilities, so I had to go solo.
