Huey’s adding to-go kitchen to East Memphis location

With to-go orders and deliveries in high demand, Huey’s is adding a to-go kitchen to its East Memphis location this fall.

The number of to-go orders and deliveries at the restaurant at 4872 Poplar Ave. often overwhelms the staff, requiring the restaurant to shut down the to-go service.

“We are using this to lower stress and lower the disruption of our to-go orders,” said Ashley Robilio, Huey’s president.

According to a permit filed this month with the Memphis and Shelby County Department of Planning and Development, the estimated cost of the project is $700,000. 

Traditional Construction Co. filed the permit for the interior alterations. 

When the neighboring clothing store Coming Attractions space was made available, Huey’s saw the opportunity to build the to-go kitchen.

“We thought the best way to do it was to open up a to-go only kitchen and have all of our to-go orders come out of that side,” Robilio said. “Our end goal is to have a beautiful new kitchen that we are using for to-go only.”

“We are expecting a huge difference in our speed, efficiency and quality,” Robilio said. “We suspect that our restaurant service will greatly improve also,” since customers will be getting their food quicker, and seated faster.

The addition will not change the restaurant and how it operates, Robilio said. The services will still be the same for calling in orders, ordering online, ordering to go and deliveries. Also, the same menu will be offered.

There will be a separate entrance to the to-go kitchen, but there will be a connection to the existing building for the cooks and managers.

The current designated area for to-go orders is a small space and Robilio said the plan is make the space “bigger, nicer and adding a full kitchen.”

“It’s going to be huge,” she said. “We are also hoping to add two little offices in the back for more office space.” 

The to-go kitchen probably will likely be open four or five days a week until details are finalized, Robilio said.
