Sound Bites: Wiseacre owners on winning big and crowning themselves the Panuzzo King

When life gives you pizza dough, make panuzzo.

That’s what Wiseacre Brewing Co. owners Davin and Kellan Bartosch did when they decided to bring food service in-house at their Broad Avenue taproom location.

Their team had already perfected a New Haven-style pizza for Little Bettie, the snack counter at their Downtown taproom.

Why not use that dough and pack it out with carefully-curated fillings for the trendy panuzzo, an Italian sandwich made on flatbread-esque dough?

The brothers joined me back in January on “Sound Bites” for a lively chat about Wiseacre, beer, food, winning big at beer contests and opening Panuzzo King at 2783 Broad Ave. in September 2025.

On the podcast, we also went down memory lane: their background in beer-making, a wild night at the Broad Avenue taproom, an I Love Memphis Blog birthday party and that time I was accidentally mean to them in a blog post.

We talked about what it’s like to be crowned top dog for their Sky Dog Amber at the 2025 Great American Beer Festival. Wiseacre also won a silver for the Tiny Bomb American Pilsner at GABF, and the Oktoberfest brew snagged a bronze medal at the World Beer Cup. 

“It’s been a h--- of a year for Wiseacre in brewing. It’s always amazing to win a medal, … (but) in my opinion, those are the only two competitions that I think are super important because you’re being judged by your peers,” Kellan Bartosch said. “It really says a lot about … the people who work (at Wiseacre). The production team here cares so much about what they’re doing.”
