Wild Beet grows devoted citywide fan base
“(The food business) is really challenging, and margins are super small,” Wild Beet owner Kelcie Nollner said. “It’s not as fun as it looks, but I wouldn’t change it. I love what I do.” (Mark Weber/The Daily Memphian)
Kelcie Nollner was living in New York and interning at Self magazine when she discovered salad-focused restaurants.
One day, she was sent to pick up lunch for the office at the nearby Chopt Creative Salad Co. After that, she ate there every day while in the Big Apple, where she also was studying fashion merchandising.
But when she returned to her hometown of Memphis, there wasn’t a Chopt. There wasn’t anything like it, either.
