Work starting soon on Rising Roll restaurant in E. Memphis

Construction may soon start on a new restaurant called Rising Roll, on the ground floor of the 11-story Poplar Towers, 6263 Poplar.

Franchisee Michael Black applied last week for a construction permit, and estimated the work will cost $300,000.

Rising Roll will occupy 2,300 square feet comprising the east half of the ground floor, where Regions Bank used to operate a branch.

Black has described Rising Roll as a fast-casual restaurant serving healthy food that is freshly made with fresh ingredients.

The Atlanta-based chain has about 20 locations, and the Poplar Towers site will be the first in the Memphis region.

Rising Roll will employ 10 to 20 people and be open seven days a week.

The restaurant is among several new tenants in the recently renovated, 129,533-square-foot Poplar Towers. Others include insurance firm Douglas & Greer Inc. and LiveStock Nutrition.
