Wild Beet grows devoted citywide fan base
Kelcie Noloner was living in New York and interning at Self magazine when she discovered salad-focused restaurants.
One day, she was sent to pick up lunch for the office at the nearby Chopt Creative Salad Co. After that, she ate there every day while in the Big Apple and then at a Chopt location in Nashville where she was studying fashion merchandising.
But when she returned to her hometown of Memphis, there wasn’t a Chopt. There wasn’t anything like it, either.
