Recipe Exchange: Bardog’s penne alla vodka

By , Special to The Daily Memphian Published: April 25, 2026 4:00 AM CT

Penne alla vodka is a dish that has been on Bardog Tavern’s menu since it opened in 2008.

The story of the recipe began back in the late 1990s and early 2000s, when Bardog owner Aldo Dean was living and bartending in New York City.

“I learned how to make the vodka sauce from my friend Mark Allen, who taught me the recipe while working out of a small, closet-like kitchen at Pomodoro Pizza on Spring Street,” Dean said. “He was one of the best Italian kitchen chefs I have ever known.”
