Recipe Exchange: Vergos family’s Greek Horiatiki salad

You might be surprised to learn that the late Charlie Vergos didn’t serve a lot of barbecue at home.

“Despite selling lots of barbecue for a living, my grandparents never served it at home. So, instead of big summer barbecues, my yiayia (Greek for grandmother) would fix mostly Greek dishes with all of the amazing produce that summertime in the South yields,” said Anna Vergos Blair, a third-generation co-owner of The Rendezvous.

The two staples that were consistent with all of these meals were her grandmother’s Greek salads to start the meal and cut-up melons and fresh cherries to end it.
