Rebecca Severs and her husband Jason Severs opened Bari Ristorante when their eldest son was just 6 weeks old.

Two more sons and decades of successful restaurant ownership later, Rebecca Severs decided it was time to take another big leap for herself.

After years of experience and preparation, she decided to seek an official certification as a VIA Italian Wine Ambassador. Now, she’s one of only about 525 people in the world — and only 120 in the United States — to hold the prestigious title.

She joined me on the “Sound Bites” podcast this summer to talk about becoming the only VIA Italian Wine Ambassador in the state, running a Midtown staple, Bari’s move a few years back and some of its kitchen’s signature dishes — that carbonara, squash blossoms, fresh seafood and the enormous Italian wine and cheese lists.

Pro tip: Bari moved their usual Italian meatball and tiramisu specials from November to October this year, so you have one week left to get those two items.

Want to try your hand at a homemade version of a Bari dish? Jennifer Chandler’s Recipe Exchange recently featured Jason Severs’ orecchiette alla Pugliese, which has been on the restaurant’s menu for 24 years.
