Recipe Exchange: Bari’s orecchiette alla Pugliese

Orecchiette alla Pugliese has been on the menu at Bari Ristorante e Enoteca since the restaurant first opened 24 years ago.

The traditional dish is a taste of Bari, Italy, where nonnas have long made the distinctive ear-shaped pasta by hand.

“Almost every nonna (Italian for grandmother) there makes the pasta by hand, letting it dry, then using it the same day usually,” said Bari chef and owner Jason Severs. “There’s a very famous street in Bari that is lined with nonnas sitting at tables outside making orecchiette and selling it.”
